Cold maceration (2°) for 12 days in a cold room, in small containers of 5 hl before fermentation.
Slow alcoholic fermentation, manual pigeage at a temperature of 25° maximum. Average heating.
Maturing in new barrels for 18 months.
Reveals a spicy and morello cherry nose, and a soft, round, silky mouth, with aromas of lightly cocoa-stone fruits.
